Rob Ralyea, MS, RS, is a retired senior extension associate of the Dairy Foods Extension Team in the Department of Food Science at Cornell University. During his time there, he also served as the Food Processing and Development Laboratory Manager in the same department for 18 years, leading all dairy product development and innovation projects. He studied at Kansas State University and Cornell University. Ralyea was the resident cheese extension lead, providing innovative and practical information for the industry to improve the safety and quality of cheese and other dairy products in New York State, nationally, and internationally. Additionally, he served as a judge for the New York State Fair cheese competition and the American Cheese Society national competition. Ralyea is also a FSPCA PCQI and risk assessment for food defense lead instructor, a registered sanitarian, and holds both SQF and HACCP certifications.
With extensive experience in solving microbiological issues in dairy and food plants, he has been an exceptionally popular instructor known for his dynamic presentation style. He is also a retired Veterinary Corps warrant officer from the United States Army where his primary role was the safety and security of food and war reserve supplies and overall Department of Defense Force health protection.
