I have extensive experience with in-plant troubleshooting.  I have been all over the United States, Europe and even Russia helping dairy processing plants solve problems.  I have helped yogurt, fluid milk, UHT and cheese plants solve issues that they couldn't solve in-house.  I also spent 18 years running the Cornell Food Product Development Laboratory (FPDL) and have varietal experience in developing all kinds of dairy products.  I am a microbiologist by trade so have a detailed understanding of how the regulatory agencies use that data.  I can also help you understand what data actually means when you get WGS (whole genome sequencing) results from regulatory inspections.  I have and can also help if your company has to go to a regulatory hearing.
